Состояние и перспективы использования масла Аргании колючей в питании и диетотерапии

Аннотация
Введение. Наряду с высокой пищевой ценностью арганового масла, географический ареал произрастания Аргании колючей весьма ограничен, вид плохо поддается интродукции, что является ведущей причиной завышенной рыночной стоимости масла, его фальсификации и ограниченности круга реальных потребителей.
Цель статьи - произвести поиск технологических решений, позволяющих обеспечить возможность включения арганового масла в рацион большего числа потребителей и вместе с тем сделать бессмысленной саму идею фальсификации этого продукта.
Материалы и методы. На основании обзора и анализа мирового опыта по получению и пищевому использованию масла Аргании колючей, была рассмотрена взаимосвязь между технологическими приемами выделения и очистки масла и составом его биологически активных компонентов: полиненасыщенных жирных кислот, токоферолов, стеролов, фенольных соединений. Проанализированы основные направления использования арганового масла в диетическом питании и обобщены результаты международных клинических исследований, основанных на включении арганового масла в диетотерапию при метаболических нарушениях и психо-неврологических расстройствах различной природы.
Результаты и их применение. Отмечена эффективность компонентов арганового масла в экспрессии генов и ремодуляции метаболизма стероидов и гормонов. Показано, что при регулярном включении в рацион компоненты арганового масла обеспечивают желчегонное, кардио-, гепато- и химиопротекторное действие, проявляют нейропротекторные эффекты в отношении причин когнитивных нарушений и нервно-психических расстройств. Таким образом, включение арганового масла в рацион потребителей и исключение фальсификации данного продукта может быть достигнуто при научно-обоснованном комбинировании арганового масла с другими пищевыми растительными маслами, имеющими отличающийся состав жирных кислот и сопутствующих биологически активных компонентов. Предложены перспективные направления купажирования растительных масел.
